Sullivan's Soda Bread
4 cups all-purpose flour
1 cup sugar
1 teaspoon each: baking soda, baking powder
1/4 teaspoon salt
1/3 cup unsalted butter, melted
1 1/3 cups buttermilk
1 large egg, lightly beaten
1 cup raisins or craisins
Heat oven to 350 degrees. Grease a cast-iron skillet or large baking sheet. Combine flour, sugar, baking soda, baking powder and salt in a large bowl; make a well in the center. Combine butter, buttermilk and egg in a smaller bowl. Add the liquids to the dry ingredients, pouring it into the well and stirring to form a soft dough. Add raisins and mix lightly. With lightly floured hands, transfer batter to baking sheet, shaping into a ball. Slash an “X” across the top. Bake until set, 50 to 60 minutes.
