Spinach and Beans

2 tablespoons olive oil

1 1/2 onions, chopped

1 15-ounce can of tomatoes

1 15-ounce can of northern or navy beans

1 package of frozen chopped spinach

1 clove garlic, minced

oregano

crushed red pepper

salt

pepper

basil

 

Sauté chopped onions and garlic in olive oil until the onions are tender. Add 1 large can of tomatoes (mash them up in the pot). Add 1 large can of northern or navy beans. Add 1 package of frozen chopped spinach (don’t drain or thaw the spinach). Season with oregano, crushed red pepper, salt, pepper, and basil. Simmer for 35 to 40 minutes, covered. Serve with grated parmesan cheese. You can serve this over noodles if you like, but it doesn’t need them.
