Southern Lentils and Vegetables

1 1/4 cups dried lentils

1 cup sliced carrots (about 2 medium)

1 cup fresh or frozen green beans, cut into 1-inch pieces

1/2 cup chopped green onions (about 5 medium)

1/2 cup water

1 teaspoon Creole or Cajun seasoning

2 to 3 teaspoons red pepper sauce

1/8 teaspoon pepper

1 can (28 ounces) whole tomatoes, undrained

1 can (15 to 16 ounces) black-eyed peas, undrained

2 large sweet potatoes (about 1 1/2 pounds), cut into 1-inch pieces

 

Heat all ingredients to boiling in Dutch oven, breaking up tomatoes; reduce heat. Cover and simmer 40 to 50 minutes or until vegetables and lentils are tender.

 

Serves 6
