Quick Cioppino
1 large onion, chopped
1 clove garlic, minced
1/2 each, red and green pepper (optional - see note)
1 teaspoon olive oil
½ teaspoon salt
¼ teaspoon pepper
1 bay leaf
½ teaspoon dried oregano
1 bag of Trader Joe’s frozen Seafood Blend
1 jar of marinara sauce
1-16 ounce can of peeled tomatoes, cut up
a drizzle of balsamic vinegar or white wine
some cooked small pasta shells or rice
Sauté the onion and garlic in a pan with olive oil. Add salt to caramelize the onion. Sauté until golden. Add the bag of frozen Seafood Blend and sauté until the seafood is opaque. Add pepper, bay leaf, marinara sauce, and can of tomatoes with liquid. Bring to a boil, turn heat down and simmer until hot (about 10 or 15 minutes). Sprinkle a drizzle of balsamic vinegar or white wine to add flavor.
Serve over pasta or rice.
Note: We sauté some chopped red and green pepper (half of each) with the onion for texture but that is optional.
