Kenton Caviar

1 can each of Dark Red Kidney Beans, Baby Lima Beans, Black Eyed Peas (drained)

3 stalks of celery, chopped

6 radishes, chopped

fresh chives, chopped

1/4  cup onion, chopped

Balsamic vinegar (we like a heavy hand but use as much as you like)

1 tablespoon olive oil

1 teaspoon garlic, minced

salt and pepper to taste

1/4 cup fresh parsley, chopped

 

Combine and season to taste. Refrigerate and serve cold.

 

Note: We sometimes serve this topped with Feta cheese
