Kale with Grilled Sausage and White Beans

3 links Trader Joe’s Garlic and Herb Chicken Sausage

2 tablespoons olive oil

1 onion, chopped

2 cloves garlic, minced

1/2 teaspoon salt

1 pound of kale, stemmed and sliced in 1/2 inch ribbons

1/2 cup each: white wine, water

1 can (14 ounces) white beans, drained, rinsed

1/2 cup thinly sliced sun-dried tomatoes (we didn’t use oil packed)

 

Grill sausages and cut in 1/2 inch slices. Heat oil in skillet over medium-high heat. Add onions and garlic and 1/4 teaspoon of salt. Add kale, wine and water, if needed. Add kale in batches if necessary. Stir to coat kale; season with 1/4 teaspoon salt. Cook until kale wilts, about 6 minutes. Add sausage and stir just until warm.

 

Chef’s note: Serve with corn bread and Cole Slaw. We loved this the second night over bow tie pasta with parmesan cheese.
