Janel's Green Rice Salad

1 Box of Rice A Roni, Chicken Flavor

2 6 ounce jars of Marinated Artichoke Hearts, chopped (reserve the marinade from 1 jar to mix with the mayonnaise)

½ cup each of chopped green pepper, green onions, green olives, celery, or any other green vegetable you would like to include

1/3 cup mayonnaise like Hellmann’s

2 tablespoons of vegetable oil

1/8-3/4 teaspoon curry powder (optional)

 

Sauté the dry rice/vermicelli in oil and curry, if using, until vermicelli is golden. Add 2 ½ cup water and seasoning mix and bring to a boil. Cover and simmer 20 to 25 minutes. Let cool to room temperature. Mix mayonnaise with marinade from the artichoke jar. Mix the vegetables, rice, and mayonnaise mixture. Serve at room temperature.
