Bob's Spanish Rice

3 tablespoons of olive oil

1 teaspoon minced garlic

1 small onion, chopped

1 cup rice

1 can chicken broth

½ cup mild salsa

½ tablespoon chili powder

1 teaspoon cumin

½ cup frozen corn

½ cup frozen lima beans

 

Heat oil in saucepan and stir fry the rice, onion, and garlic until golden brown. Add the chicken broth and enough water to make 2 cups of liquid. Add salsa, spices and frozen vegetables. Simmer, covered, about 20 minutes or until done.

 

Note: If you don’t like vegetables, leave them out or add any other frozen vegetable.
